1 box Duff Sweeter Than Honey Cornbread Mix
1 large eggs
1 can (15 oz.) of pumpkin puree (not pumpkin pie filling)
1/4 cup of olive oil
1/4 cup of milk
1 tbsp. of molasses
1/2 tbsp. of ground cinnamon
1/4 tsp. of ground nutmeg
1/3 cup of light brown sugar

1. Preheat oven to 400° F. Generously grease an 8˝x 8˝x 2˝ pan.
2. In a medium bowl, whisk together dry ingredients; the Sweeter Than Honey Cornbread mix, cinnamon, nutmeg, and brown sugar. Set aside.
3. In the bowl of a stand mixer fitted with a paddle attachment, lightly beat eggs, and then stir in the pumpkin puree, olive oil, milk, and molasses. Stir the wet ingredients into the bowl of the dry ingredients just until combined, and then pour the batter into the pan, smoothing and leveling the top surface.
4. Bake 25 to 30 minutes, or until a toothpick inserted into the center comes out clean.
